Chemsha is inspired by my teenage years, when my uncle introduced me to a local joint in Nairobi’s CBD. It was here that I experienced Tumbukiza, a traditional dish of slow-simmered meat on the bone, served in a hearty, herb-infused broth.
Chemsha pays homage to this memory. This elevated version features lamb confit cooked in a vegetable mirepoix, paired with a rich lamb demi-glace and tender potatoes—celebrating the soul of Kenyan cuisine while embracing refined techniques.
Down the Rabbit Hole: A Tribute to Fatherhood
This dish reflects my roots in Nyandarua County, where my father spent his youth foraging and hunting rabbits in the forest. These adventures, filled with laughter and survival, were an essential part of my father’s childhood.
Down the Rabbit Hole recreates this rustic experience with a modern twist. The dish brings the flavours of home to life while honouring the stories of resilience, resourcefulness, and the joy of shared meals in a large family.
